The Diagnosis
Three-outlet grease trap serving a 120-cover restaurant kitchen. Trap had not been desludged in 14 months — BMC regulation requires quarterly service for this volume of covers. The baffles were coated in 6cm of congealed fat. Outlet pipe to the municipal drain was 80% blocked. The trap was functioning as a sealed container, not a separation unit.
